Makes enough for 10 servings

To make the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

For the Cocktail (makes 850ml, enough for 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

For the Cordial: Place all the items into a pan, bring to a gentle boil, stirring so the sugar melts. Next, remove from the heat and leave to cool down entirely. Pour into an sterilised bottle, seal keeping it chilled, where it will keep for around a month.

Preparing the Premix: Mix every liquids in a large bottle, allow it to infuse for one hour, then strain best through a fine cloth, making it perfectly clear.

For serving: Measure 85ml of your premix into a stirring glass containing ice, gently stirring carefully for a minute to chill. Filter to a frosted cocktail glass or equivalent, top with some cranberries and complete it by giving it a light spray with the mandarin essence over the drink.
